What you’ll be doing
In this role you will support our projects and combine the power of screening and yeast selection for enhanced properties such as aroma, fermentation characteristics and product quality. You will conduct laboratory scale fermentation trials and pinpoint yeasts with interesting flavors and fermentation parameters. You will be part of deciding which yeasts we will further improve by investigating the presence of target genes and genomic differences between the candidates and select yeast candidates for breeding and state-of-the art targeted approaches to make further improvements of the yeasts. Careful strain selection and parallel small-scale laboratory fermentations will ensure that we pick the top candidates for scale up trials. All by non-GMO technologies.
